Between the two, you can have a mini pie bar for your holiday celebrations! These mini chocolate pecan pies are a perfectly sized party food. Plus you can make these the night before your bash. Mini Chocolate Pecan Pie Recipe
Makes 18 mini pies.
Ingredients
- 1 stick butter (melted)
- 1 cup sugar
- 2 eggs (beaten)
- 1/4 cup flour
- 1 tsp vanilla
- Refrigerated pie crusts
- 1 cup chopped pecans
- 1 cup mini chocolate chips
Instructions:
- These mini pies should be made in a regular size muffin tin. Just use a wide canning lid to cut the crust into correctly sized circles. Place those circles into your regular size muffin tin. Be sure to spray the tin with cooking spray to prevent sticking. Press down into the bottom and up the sides of each of the cups.
- Mix the butter, sugar, eggs, flour, and vanilla. Then stir in the pecans and chocolate chips.
- Pour the mixture into your pie crusts. Each cup should be 2/3 to 3/4 full.
- Bake at 350 degrees for 22-24 minutes. You can garnish each with a whole pecan on top if desired. Yields 18 mini pies.
