These soft lemon cookies may just be the best sugar cookie recipe of all time. If you love a touch of lemon in your desserts, this one if for you. My entire family loved these and I will be making these over and over again. A big soft cookie is the perfect dessert anytime of the year.
Soft Lemon Cookies Recipe
Ingredients
- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- Zest of 2 large lemons
- 1 1/2 cups granulated sugar
- 1 cup unsalted butter, at room temperature
- A large egg
- 1/2 teaspoon vanilla extract
- 2 tablespoons fresh lemon juice
- 1/2 cup granulated sugar for rolling cookies
Directions
- Preheat oven to 350 degrees F. I also like to add parchment paper to my baking sheets to prevent sticking.
- Mix dry ingredients in a small bowl first (flour, baking soda, baking powder, and salt). Mix well and set aside.
- In another bowl, beat together the butter and 1 1/2 cups granulated sugar.
- To the butter mixture, add the lemon zest, egg, vanilla, and lemon juice.
- Stir until combined then start adding the dry ingredient mixture.
- Mix well but do not over mix.
- Roll rounded tablespoons of your dough into balls. Roll in granulated sugar.
- Place balls on your cookie sheets at least 2 inches apart.
- Bake 7-9 minutes or until cookies are just starting to brown and crack on the top. BE SURE NOT TO OVER BAKE!
- Remove from oven and allow to sit about two minutes before removing with a spatula.
- Cool on a cooling rack then enjoy!
