Make these St. Patrick’s Day cupcakes this year and celebrate everything green! Yes, they even include a rainbow and a pot of gold. It really doesn’t get much better than that! The kids will love having you bring these fun cupcakes to their school to celebrate or you can even make them as an after-school snack. Either way, these cupcakes are sure to be a hit with the entire family.
St. Patrick’s Day Cupcakes Recipe
Ingredients:
Cupcakes:
- Vanilla cupcake mix (calls for oil, eggs and water)
- Green food coloring
Decorating:
- 2 cans vanilla frosting
- Green food coloring
- Airhead Extreme Candy
- Reese’s miniature peanut butter cups
- Gold sprinkles
- Miniature marshmallows
You will also need:
- Large mixing bowl
- Hand/stand mixer
- Cupcake pans
- Green cupcake liners
- Decorating bag
- Large star decorating tip
- Spoon
Directions:
- Preheat your oven to 350 degrees F and line 2 cupcake pans with cupcake liners.
- Prepare your cake mix by mixing together the cake mix, oil, and eggs as directed on the box.
- Mix in a few drops of green food coloring.
- Scoop out the batter into your cupcake liners, filling each cup 1/2 way full.
- Bake for 15 minutes and then remove to let cool.
- Mix your frosting with green food coloring and scoop into a decorating bag with a star tip at the bottom. Reserve some frosting that is untinted.
- Then frost each cupcake green from the center working your way out.
- Cut the Airhead Extremes into 3.5” pieces and stick each end into the frosting to look like a rainbow.
- Place 3 miniature marshmallows onto each side of the rainbow.
- Unwrap the Reese’s, leaving it in the brown cup wrapper and then frost the top of the Reese’s cup with the untinted frosting.
- Sprinkle the gold sprinkles onto the frosting until covered and set onto the frosted cupcake by the rainbow.
