Give me some banana bread cake any day of the week. Don’t get me wrong. Banana bread itself is good. But cake. With icing. Yes please! This recipe is a keeper y’all! You will be waiting for the bananas to overripe on your counter tops. Trust me on this one!
Banana Bread Cake Recipe
Cake Ingredients:
- 1 1/2 cups sugar
- 1 cup sour cream
- 2 eggs
- 1/2 cup softened butter
- 3 bananas (mashed)
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 cup chopped pecans
Frosting Ingredients:
- 1/2 cup butter
- 3 cups powdered sugar
- 1 1/2 teaspoons vanilla extract
- 3 tablespoons milk
- 1/4 cup chopped pecans (optional)
Cake Instructions:
- Start by preheating your oven to 375 degrees F.
- Grease a 13×9 inch cake pan.
- Then start mixing your banana bread cake ingredients. Beat together the sugar, sour cream, eggs, and butter until creamy.
- Add in your mashed bananas and vanilla extract. Stir well.
- Then add in your dry ingredients of flour, baking soda, and salt.
- Mix well then stir in the pecans.
- Spread into your prepared pan and bake for 25 minutes or until brown. Test to see if the cake is done with a toothpick before removing from oven.
- Cool a few minutes before adding frosting.
Frosting Instructions:
- Heat butter in a saucepan over medium heat.
- Cook until it reaches a medium brown color.
- Then remove from heat and whisk in powdered sugar a little at a time. Add milk as the mixture thickens.
- Add in vanilla last and stir.
- Pour the frosting over your warm banana bread cake immediately. Smooth with a spatula.
- Sprinkle with additional pecans if desired.
Yes you should let this cool before cutting but I never can wait. I just slice it slightly warm and dive right in!
