I have a special carrot wacky cake recipe for y’all today. This recipe uses no eggs, milk, or butter. What?!?!? Amazing right! I have seen a bunch of wacky or crazy cake recipes on Pinterest and wanted to try one. I mean can a cake with no eggs, milk , or butter actually be good? I am here to tell you that it can be delicious!
Carrot Wacky Cake Recipe
Recipe inspired by Sweet Little Bluebird.
- 1 1/2 cups all purpose flour + 3 Tablespoons
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 3/4 cup finely grated peeled carrots
- 1/2 cup chopped pecans or walnuts
- 1/2 cup golden raisins
- 1 teaspoon apple cider vinegar
- 1 teaspoon vanilla
- 5 tablespoons vegetable oil
- 1 cup water
Preheat oven to 350 degrees F. Grease and flour an 8″ baking pan.
In a large mixing bowl, mix the first 6 ingredients until well blended. Add carrots, nuts and golden raisins. Mix well. Add the vinegar, vanilla, and oil. Pour water over the top. Mix well and pour in prepared pan.
Bake for 35 to 45 minutes. Check that the cake is done with a toothpick. When inserted in the center, it should come out clean. Remove from oven when done and allow to cool. Top with the cream cheese icing recipe below.

- additional chopped nuts
Beat softened butter and cream cheese until well blended. Add powdered sugar and vanilla. Beat until creamy. Add milk to mixture until it is spreadable. Spread on cooled carrot wacky cake and top with additional nuts if desired.

This looks super yummy. Carrot cake is an all year round favorite in my house. I use olive oil instead of butter. Pinning.
Thios is the first time I have seen a carrot wacky cake although I have made other flavors and was pleased with the results. I like crushed pineapple in my carrot cake so I am wondering if that would work as an addition. I was wondering too if the pineapple juice would provide enough rising power reaction instead of the vinegar. Any thoughts on that?
I did not try it with pineapple at all. It might be worth a shot though!

Is the flour supposed to be self rising as I don’t see any leavening. I was thinking the vinegar had to react with a baking soda. to raise.
