Easy Banana Pudding
Ingredients
- 3/4 cup granulated sugar
- 1/4 cup cornstarch
- 2 1/2 cups 2% milk
- 1/2 cup heavy cream
- 3 large eggs
- 2 teaspoons vanilla extract
- 2 tablespoons butter
- 8 ounces vanilla wafers
- 4 large bananas
Directions
- Prepare the banana pudding by combining the sugar and cornstarch in a medium saucepan. Whisk together. Then add in the milk and heavy cream slowly while stirring to eliminate any lumps.
- Set the pan on a burner and turn the heat on to medium. Then cook until thick, whisking continuously. This should be 6-10 minutes. Remove pan from heat.
- Beat the eggs and vanilla, and then whisking the pudding quickly, slowly pour the egg mixture into the pan. Then return to the heat and cook until thick and bubbly. Remove from heat.
- Layer mason jars or small dessert bowls with vanilla wafers, pudding, and bananas.
- Then just serve and enjoy!
Note: To get pronounced layers, chill banana pudding before adding to jars. It may also be necessary to use more vanilla wafers and/or bananas or cut the bananas up into smaller pieces to make them easier to layer. Another option would be to crush/crumble the wafers.
Makes 6 pint size servings.
We love it when our vanilla wafers are soggy so I let my easy banana pudding chill in the refrigerator for several hours before eating. But you can eat it right away if you love that crunch.
