If you have a New Year’s Resolution to eat healthier this year, be sure to whip up a big batch of these and freeze them to eat every morning. They are great just by themselves with no toppings needed. That makes them a great on the go breakfast that won’t bust your diet! Plus they make a great addition to any meal plan because it is easy to make them ahead of time.

Healthier Peanut Butter Pancakes
Ingredients:
- 2 cups flour (1 2/3 cup white, 1/3 cup whole wheat) (NOTE: you can also use gluten-free alternatives here.)
- 1 tbsp baking powder
- 1 tbsp milled flax seed
- 3/4 cup creamy peanut butter
- 1/4 tsp salt
- 2 tbsp vegetable oil
- 1/4 cup honey
- 2 eggs
- 2 1/4 cups milk
Instructions:
- Mix all ingredients together well.
- Pour about 1/4 cup of the mixture onto a greased griddle.
- Flip when bottoms are brown and bubbles form on the top.
- Brown the opposite side of each pancake then remove each to a serving platter.
This recipe makes a huge stack of peanut butter pancakes. I like to take them and layer with freezer paper in between them. Then I place in a freezer bag and freeze the extras. When you need them, just pull them out of the freezer one at a time in the morning and heat up. They are great for eating on the go!
I personally feel that these don’t really need any topping. They just perfect for me to eat on their own while warm. If you want, you can add just a light dusting of powdered sugar to the tops.
If your goals for the new year including eating healthier, you can start by choosing whole grains instead of refined grain products. The addition of whole wheat and flax in this recipe makes these delectable but also a bit healthier than a more traditional pancake recipe. I also love that they use honey as a natural sweetener.

I personally love all things peanut butter so these are on my list for the perfect breakfast any morning of the week. They are filling, taste amazing, and I can heat them up in a rush.
