Trust me y’all. Lemonade cupcakes are delicious and this recipe has to be the best one ever. My entire family loved these cupcakes and I know that your family will as well. Make a batch and dive in! These are perfect for anytime of the year so y’all enjoy.
Lemonade Cupcakes Recipe
Cake ingredients:
- 1 package lemon cake mix (I used the Krusteaz Lemon Pound Cake Mix)
- 1/4 cup lemonade
- 1/2 cup water
- 10 tbsp butter (melted)
Glaze ingredients:
- Lemon glaze mix (included with pound cake mix above) (substitute powdered sugar until you get a glaze like consistency if you don’t have this with your cake mix)
- 2 tbsp lemonade
- Lemon zest (if desired) (about 1 tbsp)
Heat oven to 350 degrees. Add paper liners to a muffin pan. Mix cake ingredients above until well blended. Add the batter to the muffin tin filling each one about 2/3 full. Bake 20 – 22 minutes or until a toothpick comes out clean when inserted into the center. Remove from oven and cool completely before adding the glaze.
For the glaze, mix the glaze ingredients in a small bowl until smooth. It should be a little runny but not run completely off the cupcake when applied. Add powdered sugar and/or lemonade until the consistency is correct. Drizzle over your cooled cupcakes. You can enjoy immediately or allow the glaze to set before digging in!
