Mini cheddar meatloaves in a muffin tin will be your new favorite supper. Even if you don’t like meatloaf, these little guys will win you over. Plus they bake up super quick by using the muffin tin instead of a traditional loaf pan. Get your ingredients together and give this one a try for supper this week. Mini Cheddar Meatloaves Recipe
- 1 egg
- 3/4 cup milk
- 1 cup (4 ounces) shredded cheddar cheese
- 1/2 cup quick-cooking oats
- 1/2 cup chopped onion
- 1/2 teaspoon salt
- 1 pound ground beef
- 2/3 cup ketchup
- 1/2 cup packed brown sugar
- 1-1/2 teaspoons prepared mustard
Heat oven to 350 degrees F. In a large bowl, beat egg and milk. Add in oats and cheddar cheese. Mix well and allow to stand 2 minutes. Add in onion, salt, and beef. Mix with your hands until incorporated. In a separate bowl, mix ketchup, brown sugar, and mustard. This will be your topping. Grease a 12 cup muffin tin. Divide beef mixture up evenly in the 12 cups. Add about 1 tablespoon of topping onto each meat loaf. Add more if you have it left over…trust me you don’t want to leave any of it in the bowl. Place the muffin tin on a cookie sheet to catch any spills during cooking. Bake at 350 for 24-29 minutes or until a meat thermometer reads 160 in the center of the meatloaves.
