Using a slow cooker for meal preparation is always a good idea. I love the convenience it offers plus the fact that you can make just about anything in a slow cooker. Pork loin roasts are an easy meat to cook and can be served in so many different ways but today I wanted to share one of my family’s favorite ways to have it ~ Teriyaki style.
Slow Cooker Teriyaki Pork Roast
Ingredients:
2 tbsp. sugar
2 tbsp. soy sauce {I like to use the low-sodium version}
1 tbsp. vinegar
3/4 cup apple juice
1/8 tsp. ground black pepper
1 tsp. ground ginger
1/4 tsp. garlic powder
3 pound boneless pork loin roast
3 tbsp. cornstarch
3 tbsp. cold water
1. Grease your slow cooker. I use butter for this and just rub it around the bottom and sides.
2. Combine sugar, soy sauce, vinegar, apple juice, pepper, ginger and garlic powder in your slow cooker.
3. Add the pork loin and turn to cover all sides.
4. Place lid on slow cooker and cook on low for 7 to 8 hours. I also use a probe to cook the pork to an internal temperature of 145 degrees. Once the appropriate time has passed or the roast has reached the proper temperature remove from the slow cooker and place on a platter while you make your sauce.
5. In a small saucepan combine the cornstarch and water and whisk until smooth. Stir in juices from the slow cooker and bring to a boil. Stir for 2 minutes until thickened and serve over the sliced pork roast.
One of my favorite side dishes to serve this with is some hearty garlic mashed potatoes covered in the Teriyaki sauce as well.
