Sweet Corn Salsa Recipe
- Bag of Mission® Thin & Crispy Tortilla Chips
- 1 can (11 oz) fiesta style corn
- 1 lime
- 2 Roma tomatoes
- 1 green onion
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh cilantro
- 1/4 teaspoon pepper sauce
- 1 medium avocado
Drain your can of corn and add to a bowl. Seed and dice your two tomatoes. Chop the green onion and cilantro. Then, add these ingredients to the bowl and mix well.
In a small bowl, add the juice of one lime, olive oil, and pepper sauce. Mix well. Then add to salsa bowl and mix.
Remove the peel and pit from your avocado. Dice and add to salsa bowl. Then toss well. Cover and refrigerate at least 1 hour to blend flavors. Serve this sweet corn salsa up with the Mission® Thin & Crispy Tortilla Chips. Toast your corn tortillas over an open flame or in a pan until slightly browned. Add in diced chicken and top with your sweet corn salsa. Serve these delicious snack sized bites up on a week night or for Cinco de Mayo. They make the perfect food for celebrating!
