Birds nest cookies are a great treat for Easter or just a springtime party. I don’t know about y’all but I love easy dessert recipes that look cute. Birds Nest Cookies
Ingredients:
- 1 package of sugar cookie mix (plus ingredients to make it according to the back of the package)
- 1/2 stick of butter (softened)
- 8 oz cream cheese (softened)
- 1 1/3 cup powdered sugar
- 1 teaspoon vanilla
- Food coloring
- 1 package Cadbury Shimmer Mini Eggs (or similar)
Cookie Directions:
- Prepare cookies using directions on the back of the package.
- Create 1” balls and press the balls down in the center. Build up the edges so that you make a “nest”. You will want the bottom of the cookies to be very thin.
- Bake at 350 degrees for 7-8 minutes or until the edges start to lightly brown. Do not overcook.
- Then remove from oven and leave the cookies on the baking sheet.
- Press the cookies down in the center before they cool so that they keep the “birds nest shape”.
- Allow cookies to cool completely.
Frosting Directions:
- Add cream cheese and butter to a bowl.
- Add in vanilla and then mix well.
- Slowly add in powdered sugar and mix well.
- Separate mixed icing into 3 different containers.
- Add desired colors to each with a toothpick so that the colors do not get too dark.
- Mix each one well until the desired colors are reached.
Decorating Directions:
Once your cookies are cooled and the icing is colored, fill cookies with cream cheese icing. Then add Cadbury Chocolate Eggs to garnish. Serve up your birds nest cookies for any spring occasion!
